Grapefruit Recipes

Spicy Grapefruit Salad

3/4 pound fresh spinach
1/2 medium jicama, peeled and cut into thin strips
1/2 red onion, thinly sliced
3 Texas Rio Star Grapefruit, sectioned

Mix all ingredients in salad bowl and chill.  Toss with spicy citrus salad dressing.

Makes 8 servings

Spicy Citrus Salad Dressing

2 teaspoons toasted poppy seeds
6 cloves garlic, chopped
3 tablespoons grapefruit juice
2 tablespoons white wine vinegar
2 tablespoons olive oil
1 tablespoon coarse mustard
1/2 tablespoon honey

In a blender, combine all ingredients, except poppy seeds, until creamy.  Season with salt and pepper.  Drizzle dressing over salad mixture and toss.  Top salad with poppy seeds.

 

Citrus Bruschetta

3 Texas Rio Star Grapefruit, sectioned & chopped
3 Texas Oranges, sectioned and chopped
2 tablespoons butter
2 tablespoons red onion, chopped
3 ounces crumbled blue cheese
crushed red pepper & salt to taste
baguette, sliced & toasted

Heat butter in frying pan until foaming, add citrus and onion and toss until combined.  Add salt and crushed red pepper to taste, cook for 2 minutes or to desired consistency.

Top baguettes with grapefruit mixture and cheese to serve.  Garnish with fresh herbs

Maxes about 8 servings.

Roast Chicken with Caramelized Grapefruit

3 - 3 1/2 pound chicken breasts
1/4 cup oil
2 large sweet onions cunt into 1-inch pieces
2 Texas Rio Star Grapefruit, sectioned
1 cup white wine
1/2 cup brown sugar
1/3 cup cup grapefruit juice, reserved from sectioning
1/4 cup chopped Fresh parsley

In large skillet, heat oil.  Sprinkle chicken with salt and pepper.  Cook chicken on medium-high heat, skin side down, about 4 minutes or until browned.

Place chicken in shallow roasting pan.  Add onions and grapefruit.  Combine wine, brown sugar, grapefruit juice, parsley and garlic.  Pour over Chicken.  Bake 30 minutes or until chicken is fully cooked.

Makes 4 servings
 

Citrus Guacamole

1 Texas Rio Star Grapefruit, sectioned & chopped
2 tablespoons grapefruit juice, reserved from sectioning
2 large ripe avocados
2 tablespoons purple onion, minced
2 tablespoons sour cream
1/2 teaspoon garlic powder
1/2 teaspoon salt

Peel avocado and mash with a fork until smooth, leaving some small chunks.  Add the remaining ingredients and stir well.  Gently fold in grapefruit juice and chopped sections.  Serve immediately or cover and chill until serving time.

Makes about 3 cups.

Grapefruit Pecan Cream Cheese Topper

2/3 cup pecans, finely chopped
8 ounces cream cheese, softened
1/2 Texas Rio Star Grapefruit, sectioned
2 tablespoons grapefruit zest

Combine all ingredients and beat until smooth and of spreading consistency.  Refrigerate until ready to use.

Makes about 10 servings.
